The milk for this rustic cheese comes from a herd of Brown Swiss cows on the Île-aux-Grues. It is a brushed rind, semi-soft cheese with an open paste that is dotted with eyes. The aroma is grassy and earthy and the flavours are complex, buttery and salty. The cheese was named in honor of a nearby island that was used as the first stopping point for many European immigrants on their way up the St. Lawrence river towards Montreal.
