In 1897, the La Mothe cooperative dairy in the Nouvelle-Aquitaine region of France was founded. It specialized in the production of cheeses, especially goat's milk cheeses. In 1996, the company was taken over by the Poitou Chèvre cheese dairy, a family-run business devoted exclusively to traditional products such as Chabichou du Poitou and Mothais-sur-feuille. Produced in the Poitou-Charentes region, this goat's cheese is a firework of colors and aromas. It is made from pasteurized milk, molded by hand and then matured for 3 to 4 weeks to develop its aromas. It comes in a small cylinder shape, with a lightly cracked rind delicately sprinkled with the famous Espelette pepper, from Basque country. The paste is white, runny under the crust and chalky in the center. FLAVOR: Unique in its kind, its flavor is lactic, caprine and delicate, with a slight spiciness on the finish.
