Le Crottin à Ma Manière | L'Atelier Fromagerie
Le Crottin à ma manière has a whitish beige wrinkled rind and a dense and chalky white paste. It features caprine aromas of fresh milk and nut, and lactic flavours with a touch of hazelnut.
Introduced in 2012, it is inspired from Crottin-style cheeses from the French tradition.
Cheesemaker
L'Atelier Fromagerie was founded in 2011, when veteran cheesemaker Simon Hamel decided to start producing his own cheeses. From 1999 to 2011, Simon worked as a cheesemaker for several prominent Quebec cheese producers and acquired a BAC in food processing at Laval University. He gained further experience at a farmstead goat creamery in Aveyron, France, in the summers of 2008 and 2009.
