A firm, washed rind sheep milk cheese from Kapuskasing, Ontario and named for one of the many rivers that flow through the region. The rind is flavourful and rough, with a dry and flakey paste which gets creamier toward the centre. The flavours are sweet, meaty with a slight fruity pungency coming from the rind. Its earthy flavour and slightly crumbly texture is particularly unique.
