It shows a bluish marbling contrasting with its white semi-soft paste. Its perfect balance with salt gives way to its fruity notes which reminds us of the freshness of the green apple; in aroma as well as in taste.

Samuel is a reference to Samuel de Champlain with whom, Zacharie Cloutier and its family came to Canada in the 17th Century. It’s also Marie Chantal's son’s name.
