Made with pasteurised cow's milk, this Bleu d'Auvergne AOP offers a diversity of flavours and textures, depending on the production methods used.
- Paste: Blue-veined cheese, this cheese is distinguished by its beautiful white to ivory paste, sprinkled with blue-green mould (Penicillium Roqueforti), which give it its unique and tasty character.
- Shape and Weight: Each Bleu d'Auvergne weighs about 2 to 3 kilos and is made with 20 to 30 liters of milk. Its cylindrical shape measures about 20 cm in diameter, ideal for perfect cutting and presentation.
- Ripening: Matured for a minimum of 28 days, Bleu d'Auvergne develops complex aromas and a melting, creamy texture. Its thin bloomy rind with reflections of the same shade as the paste, protects a shiny and tasty paste.
- Taste: Assertive and balanced, we love Bleu d'Auvergne for its fragrant taste and delicate aromas of undergrowth, wild mushrooms and cream, a rich and harmonious taste experience.
