Bleu des Basques is a pasteurized sheep milk cheese from the Basque Region of France. It is a firm, aged, blue cheese with a natural rind. It has a healthy, natural rind and a bloom of edible mold unique to our cellars. The blue-veined interior has a supple texture and a pronounced flavor, with notes of truffle at the finish. This cheese is distinct from most other French blues as its maturing process does not include brining, leading to a far less salty flavour.
