A soft, washed-rind cheese made from the milk of Jersey cows and sheep in the Témiscouata region of Quebec. The rind is light orange and sticky, sometimes with a layer of white bloom. The interior can be firm, but it will become soft and runny as it ages. There is a slight pungency which enhances as it ripens, and the sheep milk adds a dimension of animal flavours. Named for the clandestine alcohol smuggling that took place in the region during American prohibition.
