A firm, cooked and pressed cheese with a washed rind from the Charlevoix region of Quebec. The milk comes from a local herd of Jersey cows, giving the cheese a rich, golden colour and buttery flavour. There are notes of hay and a fruity finish.
Thermalized cow's milk. Aged a minimum of 12 months.
