The firstborn of the family, made from Charlevoix cows' milk, smells of hazelnut and cream, with just the right amount of salt. It has texture and presence in the mouth, while delicately yielding to the bite: a nice tender bite and just creamy enough, especially if you give the cheese time to chamber (which we recommend). With its notes of wild flowers and its saline finish, it is like Charlevoix, between sea and mountain, with its meadows overlooking the river and its fresh and invigorating air. For a fuller-bodied expression, try the aged version, available exclusively at the cheese shop's counter.
