Beaufort d’Alpage is an historic cheese whose origins date back to the 15th and 16th centuries when the Rhone-Alpes mountain woodlands were cleared to make pastures filled with wildflowers, herbs and a variety of grasses which the Abondance and Tarine cattle grazes freely on during the summer. The cheese is made in high altitude chalets. Beaufort D’Alpage displays complex, nutty, meaty and sweet.
