This is produced by hulling the White Proso Millet (Panicum miliaceum). It is considered to be one of the least allergenic and most easily digestible of all grains. The distinctive crunchy texture plus the pleasant mild flavour make millet a great grain ingredient.
Cooking Instructions:
Add one cup of organic millet to two cups of boiling water. Simmer for 25-30 minutes. You can pre-soak millet to shorten the cooking time 5-10 minutes, or pressure cooks it for 10 minutes once full pressure is reached. Cooked millet is good in casseroles, multi-grain bread, crackers, stews, soufflé and stuffing.
