Le Chevre Camarade | L'Atelier Fromagerie
Chèvre Camarade has an ochre-toned wrinkled rind with a dense pale yellow interior. It features caprine aromas and bold, creamy flavours with slight nutty notes and a hint of salt.
In production since 2017, Chèvre Camarade has a distinctive format: while soft, natural rind goat cheeses are usually made in small packages (around 100 gr) Chèvre Camarade can be sold by the cut.
Cheesemaker
L'Atelier Fromagerie was founded in 2011, when veteran cheesemaker Simon Hamel decided to start producing his own cheeses. From 1999 to 2011, Simon worked as a cheesemaker for several prominent Quebec cheese producers and acquired a BAC in food processing at Laval University. He gained further experience at a farmstead goat creamery in Aveyron, France, in the summers of 2008 and 2009.
