A triple cream cheese made with raw ewe’s milk in Mississipi Station, Ontario. A soft cheese with a beautiful development of texture from the sometimes chalky centre to a silky cream below the bloomy rind. Named for the Madawaska River that runs through the Ottawa Valley.
