Aromatic rosemary leaves coat this rich Manchego cheese, complementing its nutty herbal flavor. Made at a small cheesemaker in La Mancha from pasture-raised sheep’s milk.
The raw cheese is coated with fresh local rosemary before 15 months of aging. During the curing time, the cheese picks up a hint of the amazing aroma of the rosemary, adding an extra depth of flavor.
Aging makes the cheese firm and pleasantly sharp with a pleasant nuttiness. Serve with nuts and honey with a glass of your favorite vino.
