A traditional, unpasteurized ewe's milk cheese from the picturesque mountains of Pyrenees. Using the milk from Manech sheep from the mountains of the Basque region of France. It is named for the Valley of Ossau and the forest of Iraty. The rind is natural, with a pale, dusty yellow colour. The paste is firm but smooth, with notes of sweetness, nuttiness and lanolin.
