Farm cheese with semi-firm paste aged on the surface. The crust is beige-orange pleated and the butter-colored dough, flexible and creamy. Its smell of butter is marked and rustic. To the taste, it has flavors of cream, hazelnuts, with a vegetable note. Slightly salted, it is the first specialty farm cheese produced by the madelinots. The Pied-De-Vent is made from a whole milk from a single herd fed by the terroir of the Îles de la Madeleine. The cows are fed with the diversity of the Islands' fodder, "which gives the cheese all its typicality.
The expression Pied-De-Vent is used in the Islands to refer to the sun's rays piercing through the clouds. The beliefs say that these rays of sunshine announce strong winds.
