Ibores Paprika is a protected cheese from Extramadura by small artisanal producers, with milk from their own smallholdings. A rich diet of fallen acorns and thyme create a flavoursome milk. 

Ibores Paprika has a buttery texture and nutty background flavour, with a more prominent paprika spice from the rind.

This cheese is aged for a minimum of three months, is made with raw goat’s milk and vegetarian rennet and is covered with paprika.
