Chevre à Ma Manière | L'Atelier Fromagerie
Le Chèvre À Ma Manière presents a whitish-beige wrinkly rind and a chalky, unctuous white paste. It features fresh goat milk and nutty aromas, and slightly tangy, lactic and hazelnut flavours.
Introduced in 2012, le Chèvre À Ma Manière is delightfully original: cheeses of this type are traditionally made with cow milk, such as France’s Saint-Félicien.
Cheesemaker
L'Atelier Fromagerie was founded in 2011, when veteran cheesemaker Simon Hamel decided to start producing his own cheeses. From 1999 to 2011, Simon worked as a cheesemaker for several prominent Quebec cheese producers and acquired a BAC in food processing at Laval University. He gained further experience at a farmstead goat creamery in Aveyron, France, in the summers of 2008 and 2009.
