Washed rind cheese produced with whole raw mountain milk obtained from Pezzata Rossa cows. The orange rind is due to the traditional washing with water & salt, the paste is ivory white, soft and with diffuse holes.
A sweet, melting & complex taste: on the palate you find notes of hay, hazelnut, undergrowth & damp cellar. Matured for a minimum of 60 days.
The Caseificio Sociale Catanaccio is a small cooperative established in 2014 in Vigo di Fassa, in Trentino Alto Adige. The producers are also breeders of the Pezzata Rossa cattle used for this cheese. They have chosen to invest in the transformation of their own milk in order to safeguard their farms from the economic crisis by giving life to cheeses that combine tradition & technological evolution, such as robotic milking for better animal welfare.
